Breaded Zucchini

Ingredients
2 Zucchini sliced .5 cup of seasoned bread crumbs1 tablespoon of Reduced fat parmesan cheese1 egg whiteSalt and pepper to taste
Directions
Preheat oven to 450 F.

Slice zucchini into circles or sticks (sticks are less time-consuming).

Mix breadcrumbs, parmesan cheese, salt and pepper together in one bowl.

Dip zucchini in the egg white, next dip zucchini into breadcrumb mixture.

Spray baking sheet with non-stick cooking spray and place zucchini on sheet.

Bake for 15-20 minutes at 450 F.

    I adjusted this to use low-fat sour cream instead of the egg whites, and crumbled croutons. I haven't had breaded zucchini in years, so this was a treat, without all the excess calories of deep-frying. - 8/3/10
