Ingredients
Italian or French bread loaf3 eggs1 scant cup sugar1 quart milk or half-and-half2 T vanlla4-5 large (OLD, or overripe, or black) bananas1/2 tsp grated nutmet1 Tsp cinnamon1 cup raisins1/2 tsp fresh finely grated ginger root2 Tbsp dark rum or banana liqueur(I called it vodka above for the calorie count because the website would not process the words liqueur, Galliano, or liquor)For Banana Liqueur Sauce1 sliced banana 1 T butter (or Can't Believe)1 T banana liqueur1 T sugar
Directions
Put raisins in rum or liqueur and warm in MWave 30 secs. Let sit 30 mins. Stir in 1/2 tsp cinnamon and mix well. Cube a loaf of French or Italian bread. Put in a bowl with the quart of milk (fat free, or half and half, depending on how fancy or dietetic you want to make this), and let stand 1 hour. In a new bowl, beat eggs, sugar, vanilla, nutmeg, vanilla, and ginger. Mash (or puree) the bananas and combine all ingredients together. Pour into lightly greased 10 x 12 or 9 x 13 baking dish and make at 325 for 70-75 minutes, or so, or until edges are golden and toothpick inserted in center comes out nearly clean. Cool and served with whipped cream or banana sauce. Here's the banana sauce: Sauté sliced banana in butter over high heat for 2 minutes. Add sugar and banana liqueur (like Galliano), or caramel sauce, or caramel flavoring syrup and remove from heat. Stirl well and serve over banana pudding. Top with whipped cream, or fat free Reddi Whip.
