Benedictine Cucumber Sandwich Spread

Ingredients
Peel and grate cucumbers and drain, wring in cheese cloth to remove as much moisture as possible. (I prefer english cucumbers) Puree onion and garlic and add to the cream cheese and mayonaise mixture that you have beat smooth. Stir all well.

    Because I was unsure I grated 1 cucumber, 1/4 cup Mayo, 2 oz cream cheese and 1tsp minced garlic. I don't think I wrung the cucumber well enough, it seems a bit too watery for a sandwich spread, but it tastes good as a dip for now! I'll try harder next time to get more water out! - 7/6/10
