Spaghetti Squash w/Walnut Apple Sauce

Spaghetti squash (about 4 pounds).2 apples, peeled and cored1 cup chopped walnuts1/4 cup brown sugar1 tablespoon butter1 1/2 teaspoon cinnamon
Cook the squash in a 350 degree oven for 45 minutes or until tender.
Chop the apples into small bits. Saute the apples and walnut over low heat in the butter. Add the brown sugar and cinnamon. Cook for a few minutes, until the apples are soft and the walnuts are a bit toasted. Remove from heat.
When the spaghetti squash is done, remove it from the oven and use a fork to lift and separate the strands. Toss it in a bowl with the apple mixture.
Serve warm.

I thought no one else made this as a sweeter dish. Nice with a savorier protein (I had it with ham). I like it as a savory side dish too, but this is my favorite way to make spaghetti squash! I can get 8 dishes out of a 4 pound squash. I don't always put walnuts in either - to save calories;) - 12/31/09
