2 cans red kidney beans (or 1 can of kidney beans and 1 can of black beans)1 lb browned and drained 93% ground beef1-2 cups chopped onions (to your tastes)1 large green pepper, chopped2 stalks celery, chopped1 can no-salt added canned corn3 cans diced no-salt added tomatoes1 6 oz. can tomato paste2 whole bay leaves (remove before serving)2 tsp black pepper1 Tblsp cumin
Makes 10 ample servngs
Spray large crockpot with no-stick cooking spray.
Brown ground beef. Drain.
Put cooked ground beef and all remaining ingredients in crockpot.
Cook on hi for 5 hours or on lo for 7 hours.
Delicious served with a dollop of light sour cream or a tablespoon of low fat cheddar cheese; corn bread is a nice side dish.
