Sam Zien Grilled Vegetable Sandwich

Ingredients
1 small globe eggplant, sliced 1/2' thick1 zucchini, sliced lengthwise into 1/2' thick1 small yellow squash, slice lengthwise, 1/2'1 small red onion, 1/2" slices1 red bell pepper, just the sides, seededolive oilkosher salt and freshly ground pepperloaf of a oiabiatta bread 1 cup pesto sauce
Directions
- makes 4 sandwiches

- Place vegetables in a bowl and drizzle with olive oil. Season woth Kosher salt and pepper.

Place on a preheated grill pan or bbq until tender. Slice the bread and drizzle with olive oil.

Remove veggies from grill. Place bread on grill and let brown a bit. Spread pesto on one side of bread. Place assortment of veggies on bread and close up shop.
