Chopped Apple Muffins

Ingredients
4 Cups Apples Chopped1 Cup Sugar1/2 Cup Crushed Pineapple2 Eggs beaten slightly1/2 Cup Oil2 teaspoon Vanilla2 Cups Flour + 2 Tablespoons 2 teaspoons Soda2 teaspoons Cinnamon1 teaspoon Salt1 Cup Raisins (optional)1 Cup Nuts (optional)
Directions
Mix apples & Sugar.. Add Crushed Pineapple. In seperate bowl Mix eggs, oil and vanilla. Combine in seperate bowl dry ingredients. Combine all ingredients together. Then add raisins & nuts if using. Bake in greased muffin tins at 325 degrees for 25 minutes.
