Ingredients
1lb FROZEN Chicken Breast1 Can Bush's Great Northern Beans (undrained)1 Can Black Beans (undrained)1 Can Dark Red Kidney Beans (Partially Drained)1 Can Green Giant White Corn (undrained)1 Packet Taco Seasoning1 Packet Hidden Valley Ranch Dip Mix. (powder)1 Can Diced Tomatoes w/ Green Chiles (undrained)+ Dash of Cumin.ONE SERVING = ONE (8OZ)CUPCan be topped with shredded cheese and sour cream - NOT included in nutrition information.
Directions
All ingredients in crock pot 1 hour on high 6 on low!

Do not defrost chicken, put it in first, on the bottom of the pot closest to the heating mechanism.

Do not drain any of the cans except the kidney beans and even then only drain off what sits on the top of the can, leave 3/4ths of undrained.

This is a thick hearty soup with a great flavor.
Can be substitued with a pound of frozen ground beef but that adds more calories and more fat than necessary.

Cook for 1 hour on high, 6 on low.

Once it's done cooking you will be able to use a fork and shred up the chicken while still in the pot!

    very tasty but high in sodium, I used fresh beans and soaked them overnight the night before instead of canned beans....if you get rid of the canned beans the sodium per serving is under 200mg instead of over 800mg! - 12/30/09

    Great tasting soup! My husband has already asked me to make it again. I drained and rinsed all the beans and corn, then added 3 cups fat free low sodium chicken broth and let cook all day. Soup was nice and thick. Added a tablespoon of light sour cream to top off each bowl-delicious! - 1/26/09

    Super Yum, Super Easy! Rinsed all canned ingredients, did not use taco seasoning or ranch, but added canned salsa ranchero. Seasoned with Cumin, oregano, chili powder, red pepper flakes, cayenne, and garlic powder. Used boneless/skinless thighs because I had them on hand. In the rotation, thanks! - 3/24/10

    One of our favorites! Definitely rinse the beans and you can forgo the ranch dressing mix. Add extra water, garlic, and an extra can of tomatoes with jalepeno or a can of spicy v-8 if you appreciate a kick. Ground turkey breast works great too! - 8/30/10

    I made this yesterday and it came out really nice. I used the HOT taco seasoning to add a kick and it definitely added a kick! The chicken was very easy to tear apart once cooked. I did it on low for about 6-7 hours and then put it my tupperware for storage. I got about 8 servings. - 3/29/10

    This is really good and super easy. I used thawed chicken, regular tomatoes and added a small can of chilis, it still turned out really good. I will probably play with the seasonings next time, maybe using half pack of each and make a little more spicy. But was very inexpensive to make and good - 2/16/09

    Needs altering in its ingredients if you want to make it healthy. Try using organic canned beans or uncanned beans. Dice your own tomato/chilis, and omit the ranch dip. The flavor is very good but it's WAY too salty if you use everything from a can. - 7/4/10

    Will give this a try with some tweaking to make it cleaner so no ranch seasoning and use McCormacks Taco Seasoning as it has no additives. Will rinse the beans especially if there is salt in the juice. - 10/4/09

    This is simular to a one I make and it is wonderful!!! I put mine over tortilla chips and I add ranchero beans instead of bush beans. It gives it a little more of a mexican feel to it. I also add a can of pinto beans to boot. - 1/13/10

    Loved this one! I used pinto beans instead of kidney beans and had spicy ranch seasoning instead of the plain ranch for more of a kick. Turned out excellent! I added about 1/3 c. water before the last hour for more soupy texture. Def in rotation. - 1/4/11
