Red Thai Chicken Curry

Ingredients
1 tbsp olive oil 14oz can coconut milk 1 1/2 lbs chicken breast fillets 2-3 tbsp Thai Red curry paste (to taste)1 5oz can evaporated milk 1/2 tsp fish or soy sauce 2 tbsp cilantro
Directions
Heat oil and add the chicken (cut in cubes).
Cook for 5-8 minutes, until no longer pink.
Stir in curry paste, coconut milk and carnation milk. Add soy sauce and cilantro, stir well.
Bring to boil then simmer for 10-15 minutes.
