Loaded Omelet

Ingredients
2 Eggs4 Slices of Mushrooms (chopped)5 Leafs fresh spinach (chopped)5 tbsp red onion (chopped)1/8 cup red bell pepper (chopped)1/4 cup Cheddar Cheese (shredded)
Directions
Makes 1 serving. VERY FILLING!

Beat eggs until creamy, then mix in spinach. Pour egg mix into a non-stick frying pan on med-low heat. Wait a couple of minutes for the egg to cook, then add vegetables. Once top of omelet starts to cook through add cheese and fold in half. Cook until egg is no longer runny. (you can also pop in the microwave for 30 seconds to ensure the center of omelet is cooked)
