Low Cal Crockpot Chicken Stew

Ingredients
2 red potatoes1 leek-white portion only1 stalk celery1 onion1 sweet red peper8 oz or 1/2 of a 1lb bag of baby carrots8 oz can mushrooms1 can of HUNTS diced tomatos w/basil, garlic & oregano1 cup swanson 99% fat free chicken broth1lb boneless chicken breast1 TBS bay leaf (dry)1 tsp rosemary(optional) salt/pepper
Directions
Start with a 4 or 5 quart crockpot, spray with non-stick local olive oil spray. Empty cans and 1/4" cube or slice all other ingredients. Then add bay leaf, rosemary and pour chicken broth over all. Stir slightly to mix in seasoning. Turn crock pot on high for 4-5 hours or on low for 7.5 plus. It will wait for you to get home if on low. Delicious, low cal and easy. Makes Aprox 8 -1 cup sevings.
