Potato Cheese Soup

makes 4 servings ( 1 1/4 cups)2 large potatoes )10 oz., pared, 1" cubes1 cup chopped brocolli3/4 cup celery, chopped1/2 cup carrot, chopped1/4 cup onion, chopped1 tablespoon parsley1 cup low-sodium chicken broth, may need more to adjust thickness1 1/2 cup low-fat milk2 tablespoons flour4 1/2 oz lite cheese spread1 oz cubed ham
1) In a large saucepan. combine potatoes, brocolli, celery, carrot, parsley,and broth. Bring to a boil, reduce heat to low; cover and simmer until potatoes are tender, 20 minutes.
2) In a small bowl, whisk milk and flour together, slowly pour into vegetable mixture, stirring constantly until slightly thickened, about 5 minutes.
3) Add cheese spread and ham. Cook stirring occasionally until cheese melts.
