Thai Summer Roll

Ingredients
Summer Roll tapioca wrapper (in the Asian section, make sure it is tapioca, not wheat!)Julienned cucumber, carrot, red bell pepperTwo large shrimp, a slice of avocado, red leaf lettuce
Directions
Soak a wrapper in hot water for about 8 seconds or until slightly, but not all the way, soft.
Lay it flat. On one edge, about an inch in to the circle, lay two shrimp end to end. On top of the shrimp, lay all of the other vegetables, with the lettuce last. Roll the edge up toward the veggies, and roll the whole bunch of veggies and shrimp in toward the middle of the wrapper like a burrito. Fold the ends in tightl, and roll the rest of the way tight enough to keep the roll together while you bite it, but not so tight that it tears. Store it on a plate covered with a moist paper towel so it won't dry out, and make many, many more. Serve with sweet chili sauce.
