Escarole and White Bean Soup

2 Heads of Escarole - chopped5 Cloves of Garlic - diced1 Large Onion - chopped2 cans of Cannellini Beans - rinsed2 Large cans of Fat Free and Light Chicken Broth2 Strips of Turkey Bacon - chopped2 Tbsp of Olive Oil1 Tsp Nutmeg1/2 Tsp Red Pepper FlakesPepper to taste
Cook the strips of turkey bacon until crispy.
Add the olive oil, garlic, and onion.
Sautee for 5 minutes.
Add escarole and stir constantly until wilted.
Add the chicken broth, pepper flakes and nutmeg.
Bring to a boil. Boil for 10 minutes.
Reduce heat to a simmer.
Add Beans.
Simmer for 10 minutes.
Pepper to taste.
Serve.
