Apple, Cinnamon & Bran Muffins- HEALTHY :D

1 cup whole wheat flour1 cup wheat germ1 cup wheat bran1 tspoon baking soda1 tspoon baking powder1 tspoon cinnamon2 tablespoons maple syrup1 cup no-fat milk1 medium apple, grated1 cup frozen blueberries
*makes 15 medium muffins*
>preheat the oven to 190 C/ 370 F
>mix the dry ingredients into a large bowl
>warm the milk and syrup together in a saucepan over a low heat on the stove (just so the syrup dissolves)
>pour milk/syrup into the bowl with dry ingredients
>mix in fruit
half fill the muffin trays with the mixture. it should make about 15.
NB the muffins will rise a bit, but not enough to fill the entire hole.
>Bake for 20 minutes
>take out of the oven and put on wire rack
enjoy with some low fat spread
i usually eat one fresh, and then put the rest in the freezer. then pop 'em in the microwave- really convenient
