Sauerkraut Pork Roast

Ingredients
2 1/2 pounds boneless pork loin roast15 oz can sauerkraut1 onion, sliced 1/2 tablespoon ground cinnamon1/2 tablespoon caraway seed (optional) 1/2 cup brown sugar 1/2 cup apple juice (or 1/4-cup each water and applesauce)
Directions
Place the pork roast into the crockpot. Add the sauerkraut on top, and then the onions. Sprinkle the cinnamon and caraway seed over top of the onions. Scatter the brown sugar over this, and then pour in the apple juice. Cover the crock pot and cook it on High for 4 hours, or on Low for 7 to 8 hours. Serves 10.

    Had everything for this recipe, except on Christmas day realized I didn't have apple juice. Used Apelkorn (a German apple liquor), and it turned out great!! Made this dish with mashed potatoes & red cabbage. Perfect combination!! The pork is tender & juicy, combo of sweet & sour make things pop! - 12/26/09
