Grilled Chicken Nacho Bake 2 servings

Ingredients
1/2 cup Brown Minute Rice1/2 cup Water5 oz Boneless Chicken Breast Tenderloins (can use a whole pkg)Mrs Dash (I use the table version its a great alternative to salt)1 small can Chili Peppers1 fresh jalapeno1 can Rosarito no fat Refried BeansFresh Cilantro (I used about half the bunch)1 Fresh Tomato1 small can sliced black olives7/2 c of Monterrey / Cheddar cheese (you can use any kind of cheese)
Directions
Put rice and water in slow cooker. Grill chicken covered with Mrs Dash. Place chicken on top of the rice. Slice jalapeno (Do not add any seeds from the jalapeno to the recipe) Add chopped jalapeno and can of chilli peppers on top of chicken. Add can of refried beans on top of peppers. Combine chopped cilantro, chopped tomato, and black olives. Place on top of beans. Drop cheese on top of cilantro tomato mixture. When the beans start to bubble and the cheese is melted. IT's done.

Quick easy and VERY VERY VERY good.

    Most of the family agreed that this was very good (we have two very picky little boys who disagreed). I doubled the rice and the chicken, we liked the cilantro, tomato, black olive mix near the top, it had lots of flavor! Next time I'm going to shred or dice the chicken to make it easier to serve. - 3/1/11
