Chick Pea Salad

16 oz can of Chick Peas1/2 cup chopped cucumber10 grape tomatoes1/2 cup chopped red onion2 cloves or garlic1 tbsp. olive oil1/2 lemon, juicedsplash of red wine vinegar1/2 cup crumbled feta cheesedried dill and oregano to tastesalt and pepper to taste
Rinse chickpeas and put in bowl.
Add chopped cucumber, grape tomatoes (sliced in half), chopped red onion, and garlic. Drizzle with olive oil, lemon and vinegar. Mix and add in the feta cheese, and seasonings. Let chill in the fridge for 2 hours for flavors to incorporate.
Yeilds about 3 - 1 cup servings.
