8 oz. Whole Wheat Elbow Macaroni (Cooked and Drained)1 large can Diced Tomatoes1 8 oz. Can Tomato Sauce1 Can Black Beans (Drained and RInsed)1 Can Sweet Corn ( Drained and Rinsed)1 Tbsp. Extra Light Virgin Olive OIl1/2 cup Chopped Sweet Green Pepper1/2 cup Chopped Sweet Red Pepper1/2 cup Chopped Fresh Onion2 Tbsp. Chili Powder1 Tsp. Parsley1/4 Tsp. Garlic Powder1/4 Tsp. Onion Powder1/4 Tsp. Paprika2% Fat Mild Cheddar Cheese Shredded
Cook pasta and add to Slow Cooker
Add Tomatoes, Beans and Corn and Mix.
Sautee Peppers and Onion in Olive Oil then add to Slow Cooker
In a small bowl blend spices into tomato sauce then add to mixture in slow cooker.
Mix well then heat on high setting for 2 hours so flavors cook through (Or simmer on stove top on very low heat for 1 to 2 hours).
Serve with 1 oz. of cheese sprinkled on top.
(NOTE: Carefully rinsing the beans and corn should lower the sodium content calculated).
