Just For the Halibut Chowder

Ingredients
2 medium onions, diced3 cups sliced mushrooms2 large red peppers2 tbsp. butter1 tbsp. lemon juice2 - 10 oz can chicken broth4 medium potatoes, peeled and cubed2 tbsp water2 tbsp cornstarch14 oz Halibut, cubed1/2 c white wine (optional)
Directions
Saute onions, mushrooms, peppers and celery in butter until tender. Add lemon juice, broth and potatoes. Bring to a boil, cover and simmer until potatoes are tender. Blend together cornstarch and water and add to mixture. Add fish and wine. Cover and simmer just until fish flakes easily. Add salt and pepper to taste.
Serves 8.

    Pretty good! I used red pepper flakes instead of fresh red peppers, 3 cloves of garlic and some carrots. I made my recipe a little bigger as well- 3 cans of chicken stock...then added a can of cream of mushroom soup. Of course it adds a few more calories, but Man oh man was this good!!!! - 9/25/10

    This recipe could be great, but the soup base is very very bland. I do plan to make it again, but I will add lots of great herbs to pick up the flavor a bit. - 9/24/09
