Lemon Chicken Pasta

Ingredients
4 cups penne12 oz chicken breast slices1 tbsp butter3 cloves garlic minced1 cup ricotta part skim1/4 cup parmesan1 tsp lemon rind2 tbsp lemon juice1/4 tsp pepper1/2 tsp saltpinch nutmeg4 cups shredded spinach
Directions
Cook pasta, reserve 1/2 cup cooking liquid. In pan put butter and chicken, brown, add garlic, reserved cooking liquid, ricotta, half parmesan lemon rind and juice, salt, pepper and nutmeg. Add spinach and stir till wilted, add pasta and toss. Sprinkle with remaining parmesan.
