16 oz. 99% fat free ground turkey1 cup chopped carrot1 cup chopped onion1 cup chopped celery1 cup chopped broccoli2 cups cubed eggplant(optional).5 cup frozen yellow corn3 cans kidney beans3/5 tbsp chopped chipotle chili1 tbsp chili powder2 tbsp garlic powdersalt and pepper to taste
Add olive oil to soup pot and sweat mirapoix until onion is translusent, add broccoli, eggplant, and corn, and a little water or chicken stock and simmer. Spray a frying pan with PAM or what ever spray product you use and cook your turkey until slightly browned, add to vegetable mixture and then add beans and seasoning, and chopped chili's, mix well and let simmer until hot and flavorful. Makes about 10 generous bowls.
