Chicken Quesadilla with Salad and Grapes

Ingredients
2 slices jalapeno3 oz cooked boneless chicken breast1 T scallion, chopped1 small whole wheat tortilla (about 70 calories)1 oz low-fat cheddar cheese1/8 t ground cumin1 t extra virgin olive oil2 cups lettuce1/2 T salad dressing1 c fresh grapes
Directions
Serves 1.

Chop jalapenos.
Dice cooked chicken.
Cut tortilla in half.
Place one tortilla half on a microwave safe plate lined with a damp paper towel.
Arrange onion, jalapenos, and chicken evenly on tortilla half; sprinkle with cheese and cumin.
Drizzle with olive oil and remaining tortilla half; press down lightly.
Heat in microwave for 25 seconds, flip over, and heat for 25 seconds longer, or until heated through.
