Guiltless Jambalaya

Ingredients
1/3 cup each onion and bell pepper1 can diced tomatoes (add 2 servings worth)1 cup brown rice1 serving low fat turkey smoked sausage, coined1 grilled chicken breast; shredded
Directions
*Makes 2 servings*

1. Spray a frying pan with olive oil, and saute onions and peppers.
2. In a medium sauce pan, boil 2 cups water. Add rice, sauteed veggies, sausage, and shredded grilled chicken breast. Stir, cover, and cook until the rice is done.
3. If you like heat, add your favorite cajun blend to the cooking pot. After, do not forget your Tobasco!
