1 tsp. bacon grease1/2 cup frozen spinach, thawed1 cup chopped celery1 cup chopped green pepper1/4 cup chopped scallions1/4 tsp. Nature's Seasons1 cup cooked white rice4 large eggs, beaten1/4 cup plain lowfat yogurt1/2 cup shredded cheddar cheese2 tsp. grated parmesan cheeseTabasco green pepper sauce (optional)
Saute vegetables and seasoning in bacon grease on medium heat until tender. Add rice to heat. Stir in eggs, yogurt and cheddar. Continue cooking, stirring frequently to prevent burning, until eggs are firm scrambled. Top with parmesan and pepper sauce. Makes 4 servings.
