Ginger Beef

Ingredients
1 lb Flank or Sirloin (cut into matchsticks)3/4 c. cornstarch1/2 c. water2 eggs1 large carrot (julienned)3 green onions (chopped)1/4 c fresh ginger (minced)5 cloves garlic (minced)Canola Oil for fryingSauce3 Tbsp Soy Sauce4 Tbsp rice vinegar (wine or balsalmic vingr)1 Tbsp Sesame Oil1/4 c. sugar3 tsp red pepper (hot) or 1 tsp (mild)
Directions
Place cornstartch into a bowl and slowly whisk in water.
Beat in eggs then add strips of meat. Toss to coat.
Pour oil into wok, heat to hot but not smoking.
Add 1/4 of meat to oil, separate with fork while cooking, stirring frequently.
Drain on paper towl, repeat until all beef is cooked.
Leave 1 Tbsp oil in wok and add veggies in this order:
carrots - onions - ginger - garlic - stir briefly.
Add sauce mixture and bring to boil.
Add beef and heat thoroughly.
Serve with basmati rice.

    I had some trouble making this and wasn't sure how to fry the beef (I didn't use enough oil at first). I also used powdered red pepper and I think she meant flaked because it was too spicy. My fiance loved it tho! I may try it again another day. - 1/19/10
