New Orleans Inspired Stuffed Peppers

Ingredients
I box of Zatarains Black Beans & Rice1 lb. of Lean Ground Beef1 egg6 med. Green Peppers1/4 c. tomatoe juice.
Directions
Prepare the Black Beans & Rice according to package directions. Drain and cool cooked beans and rice. Reserved drained sauce.

Mix beans and rice with egg and (raw) ground beef.

Cut the off the top of the peppers and seed and clean. rinse with water and place in microwave on high for 2 minutes.

Mix beans and rice sauce with tomatoe juice.

Fill peppers with beans, rice and ground beef mixture. Place standing in baking dish, sauce the peppers with tomatoe jucie mixture. Bake 30 minutes. (They are done after 30 minutes, I like them better after baking 40-45 min.)

Makes 6 servings, 1 pepper each.
