Teriyaki Turkey Tips

Ingredients

1.5 lb turkey tips1 Zucchini (or summer squash)1 small onion1 tbsp Extra-virgin olive oilTeriyaki sauce (or marinade)Low-Sodium Soy sauceSaltPepperGarlic powderBasilGinger
1) If not already done by the butcher, cut the turkey tips into small chunks (around 1 or 2 inches in diameter)
2) Marinate turkey tips in teriyaki sauce for 10-20 minutes
3) While tips are marinating, dice the onion and the zucchini. Coat the bottom of a pan (10" or 12" works well) with the olive oil.
4) Over medium heat, sautee the onions and zucchini, until the onions just begin to brown and the zucchini starts to become translucent (about 5-10 minutes).
5) Dump the turkey tips and marinade into the pan, with the zucchini and onions.
6) Add dashes of soy sauce, salt, pepper, garlic powder, basil, and ginger, to taste.
7) Let mixture cook, stirring occassionally to help turkey tips cook evenly and thoroughly, for about 10-15 minutes, or when turkey is cooked through. You'll know the turkey is thoroughly when the inside of the thickest piece is white all the way through to the center.
8) Enjoy!
I serve this dish over brown rice seasoned with a little margarine, soy, garlic, and ginger. Over rice, it is an incredibly filling dinner!
