Chicken Gyoza with Cabbage & Chives

Ingredients
* Chicken Breast, no skin, 2 lbs * Ginger Root, 3 tbs * Cabbage, napa, 5 cup * Fresh Chives, 3 cups chopped * Garlic, 10 cloves, minced * Salt, 1.33 tbsp * *Pepper, white, 1 tsp * Paprika, 1 tsp * Sesame Oil, 2 tbsp * *Soy Sauce, 2 tbsp * Garlic powder, 2 tsp * Pepper, black, 1 tsp * gyoza wrapper, azumaya, 160 wrappers
Directions
1. Cut cabbage into small shreds, place in bowl of water and lots of salt to wilt cabbage. If this doesn't do the trick, microwave (or steam) cabbage with 2 tbs water for 30 seconds to wilt.
2. Chop and wash chives.
3. Ground chicken in a Cuisinart
4. Mix all ingredients together.
5. Cook small amount of filling in water and adjust seasonings.
6. Place heaping teaspoon of filling in wrapper and fold.
7. Put 2 tbs of oil in a heavy saucepan. Arrange pot stickers in a circle. Pour 1 cup water into pan. Cook for 10 minutes on medium heat. Leave a crack in the lid to allow steam to leave. Before serving, drizzle a few drops of sesame oil over potstickers.
