Mashed Potato Casserole

5 medium potatoes1/3 c. silken tofu1 clove garlic, crushed1 tsp. saltdash pepper2 Tbsp. olive oil2 Tbsp. chives, chopped1/2 c. cheddar cheese, grated
Preheat oven to 400 F.
Boil potatoes in water.
While they are boiling, blend together tofu, garlic, salt, and pepper.
Mash potatoes when tender, then add blended tofu mixture and olive oil. Add chives, place in lightly oiled casserole and top with cheddar cheese.
Bake for 20 minutes.
