Ingredients
Ground beef, extra lean, 48 oz (3 lbs)Onions, raw, .50 medium (2-1/2" dia) choppedGreen Peppers (bell peppers), 0.5 cup-chopped 1 carrot finely grated Zucchini, half finely gratedGarlic, 1 clove Basil, 2 tbsp Oregano, ground, 2 tbsp Salt, .25 tbsp Pepper, black, .25 tbsp Egg Beaters, original - 1/4 cup, 1 serving Saltine Crackers, fat free (Saltines), 10 saltines
Directions
Preheat oven to 400 degrees

Dice onions, bell peppers, garlic, add to large bowl, then grate finely one carrot and one have zuchinni, crush crackers combine in bowl, add all spices, add egg beaters and meat, mix together with hands, then I use a table spoon size ice cream scoop, and round them on the scoop then place on baking sheet in oven for 45 minuets uncovered, this recipie makes 100 meatballs, I cook them and freeze some so they are easy to warm up next time.

    These were really good. I only got about 80 meatballs, but I have a tendency to make them a little bigger. Also, I used fresh spinach in place of the zucchini and carrot. Yummy! - 9/22/09

    I just want to say I love this recipe and have made variations of it over and over. It always turns out good. I also have never got 100 out of the recipe but no biggie. Today I am making turkey meatballs and adding them to my cabbage soup. - 11/5/13
