Chicken Breast stuffed with Goat Cheese

Ingredients
Boneless skinless chicken breastGoat cheese crumblesThymeOlive OilSaltPepperCrushed Red Pepper
Directions
Preheat oven to 400. Mix Goat Cheese, Thyme, Crushed red pepper, and a pinch of salt and pepper. Cut small pocket into curved side of chicken breast and fill with cheese mixture. Secure with toothpick if needed. Heat 2 tbsp of olive oil in a large skillet on medium high. Cook chicken 3 min on each side and then transfer to baking dish. Cook on 400 or until juices are clear.
