Ingredients
140g double concentrated pureed tomatoes1 medium onion, chopped1tbsp butter1 tbsp flour2 liters vegetable broth2tsp dried thyme
Directions
prepare the broth in a seperate pot, and fry the onions in the butter in the other. When they are soft and slightly yellowish, add the flour to the onions.
Then start adding the broth with about half a cup at a time, constantly stirring and only adding more when the soup is soft and even. When the flour is sufficiently disolved, add the rest of the broth and the pureed tomatoes. Add the thyme and let it simmer for about 15 minutes.
