Quick vegetable soup

Ingredients
1 cup of chopped carrots1 cup of chopped celery3 scallions sliced1 cup chopped cabbage1 cup dry egg noodles1 tablespoon olive oil6 cups veggies stock
Directions
Chop all veggies.

In large pot heat olive oil with med high heat, add all veggies, and saute for 15 minutes. Add veggie stock, and noodles - boil until noodles are tender - about 15 minutes.

Makes 4, 1.75 cup servings. (4 soup bowls)
