Onion Soup

4 Tablespoons of butter (1/2 stick)4 Cups onions, thinly sliced (2-3 onions)2 Cups sliced mushrooms 1 1/2 Tablespoons flour6 Cups beef broth (not bouillion)1/2 Teaspoon salt1/2 Teaspoon pepper
In a pot, on the stovetop, melt butter and add onions. Stir constatly, cook for 15-20 minutes, or until onions are soft.
After onions have become soft, add mushrooms, cook for 2 minutes and sprinkle them with flour. Stiring and add 2 cups of beef broth continually stiring until mixture is thickened. Now add the remaining broth, salt and peper. Bring to a boil then cover and simmer for 45 minutes.
Makes 6 servings (1 1/3 Cups each)
This recipe works great for lunches if you divide it up into its serving sizes and freeze it.
