Pumpkin and Black Bean soup

2 cans black beans drained and rinsed1 can diced tomatoes2.5 cups canned pumpkin1 cup salsa1 cup nonfat evaporated milk1 cup onion, chopped3 garlic cloves mincedPepper, cumin, cayene, chili powder to taste (I never measure, just add until it taste right)
Heat soup pot and olive oil over med high heat. Add onions and saute for several minutes. Add garlic and saute for 1 min. Add in all other ingredients and bring to a boil. Lower heat and simmer 10 mins.
Makes 7 servings (2 cups/serving)
