Essential Black Bean Salad

3 cups cooked black beans1/4 red onion (med), chopped1/4 cup extra virgin olive oil2 Tbsp red wine vinegar1/4 cup parsley, choppedsalt and freshly ground black pepper to taste
I prefer to use home cooked beans rather than canned, but canned will work.
whisk together olive oil, red wine vinegar, salt and pepper. Add to drained and rinsed black beans in med bowl. Add chopped onions and toss together, adding more salt and pepper as needed (to taste).
Right before serving, add chopped parsley (to prevent from too much wilting).
Serve warm or chilled, either way is great!
