Chicken and Butternut Squash Curry

Ingredients
Cooking spray1 c. onion, sliced1.5 pounds of boneless skinless chicken breast2 to 6 tablespoons of curry powder (depends on the quality of your powder & your palate!)2 servings (1 package) V8 Golden Butternut Squash Soup1 package of Green Giant Immunity Blend Vegetables1 small can of sliced water chestnuts1/3 cup powdered milk --no liquid added1 cup chicken broth
Directions
In a deep pot, cook the onions in cooking spray until translucent. Add chicken and curry powder and put the lid on. Check back every few minutes, stirring, until the chicken is almost cooked through. Add all of the other ingredients and simmer for 15 minutes. Serve over rice, lentils, chickpeas or as a stew.
