Chicken Broccoli Bake

Ingredients
1/2 cup rice2 units cooked diced chicken breast1/2 cup diced onion1 can cream of chicken soup, reduced fat1/2 cup skim milk1/2 cup carrots1.5 cups broccoli1/4 cup reduced fat parmesan cheese1/4 tsp pepper or to taste1/2 cup bread crumbs 1 tsp butter substitute1/4 cup flour1/4 cup spices of your choice
Directions
Melt butter in a cast iron pan on medium heat. Dust chicken breast in flour and brown. Set aside.

Set heat to medium-high. Add carrots, onions and broccoli to the pan. Dice chicken and stir into the veggie mixture.

Reduce heat to medium-low and stir in milk and condensed soup. Set to simmer while oven pre-heats to 400.

Mix remaining ingredients, except crumbs, together with blended soup/veggie/chicken mixture in a 9'' x 12'' casserole dish. Top with crumbs.

Bake at 400 degrees for 30 minutes.

Makes 6 servings.

    recipe calls for fresh not dried spices, used basmati rice cooked in cassarole. cooked extra 10 minutes - 11/5/18

    this was pretty good...my family loved it...i doubled the recipe and they wanted more. I used cream of celery and cream of chicken. Did not flour the chicken but cooked it in EVOO.
    Next time i'll have to triple it with more veggies..... - 3/3/09
