Tasty Stuffed Peppers

Ingredients
3 large green bell peppers 1/2 cup uncooked white rice 1 cup of water 1 can of Campbells select harvest vegetable beef & barley soup1/4 low fat cheddar cheese
Directions
place rice and water in small pot bring to boil ,
full large pot with enough water to cover complete cover the bell peppers and bring it to boil , cut tops of peppers and scoop out the inside , then place in to boiling water cook for about 5 minutes .

once water in rice is about half gone drain water then add soup to rice , boil at med heat until most of the liquid is gone .

remove peppers from water and place in a baking dish fill with rice filling , sprinkle with cheese and bake for 5 mins at 400 F

    this was a great recipe , thanks for sharing , it was quick and easy to make and tasted good as is , but next time i might try a different soup and maybe add some herb and spices to give it a different flavor - 1/24/09
