Vegetarian Maple Waffle Breakfast Casserole

16 frozen Kashi waffles1 medium onion, chopped2 cups 2% milk2 cups Eggbeaters8 Morningstar Farms sausage patties1.5 cups shredded low fat cheese2 Tbsp maple syrup
Preheat oven to 375 F.
Chop onion and saute over medium heat in nonstick pan until translucent, 5-10 minutes.
Toast waffles or simply defrost. Defrost and coarsely chop sausage patties.
Spray 9x13 baking dish with nonstick spray, and arrange waffles in dish.
Beat together onion, milk, Eggbeaters, crumbled sausage patties, and 1 cup shredded cheese.
Pour over waffles, cover, and bake for 30 minutes. Remove cover, sprinkle with remaining cheese, and bake for an additional 15 minutes.
Makes 8 servings.
