Yam & Black Bean Salad/Wrap filling

Ingredients
2 Cups roasted Yam chunks1/2 Cup sliced purple/white onion1/2 cup canned corn or small can of yellow corn2 cups or 1 can of black beans2 T olive oil1/4 Cup vinegarFresh spinach as you likesalt and pepper to taste
Directions
Chunk up enough yams to make 2 cups. Roast in 350 degree oven for 30 minutes or until tender.
Combine ingrediants and serve as cold salad or in a wrap with baby spinach leaves. Substitute your favorite light dressing/fat free dressing for the oil and vinegar if you like.
