BLACK-EYED PEA TACOS

Ingredients
Olive Oil, 1 tbsp (remove)Onions, chopped Garlic,chopped Jalapeno Pepper Black-eyed peas 2 cans, drained, rinsedYellow Sweet Corn, 10 oz FrozenCilantro, raw, 8 tbsp Corn Tortillas, 12 tortilla, medium (approx 6" dia) Feta Cheese, 4 oz
Directions
1. Heat oil in a large skillet over med. heat. Add onion, garlic and jalapeno: season with salt & pepper. Cook stirring often, until softened 5-7 mins.
2. Add black-eyed peas, corn & 2 cups water. Simmer over med-high heat until corn is tender & most of the liquid has evaporated, 12-15 mins. Stir in cilantro: season with salt & pepper. Remove from heat.
3. To serve, fill heated tortillas with black-eyed pea mixture, goat cheese (feta cheese), and garnishes (lettuc, salsa, sliced radishes, etc)
