Mex-terranean Tuna Salad

1 can tuna, packed in water1 can chick peas (drained and rinsed)4 hard-boiled eggs1 jalapeno pepper3 sprigs Italian parsley, chopped1 avocado (peeled, seeded) roughly chopped5 sprigs fresh baby dill1 large carrot - julienned.5 cucumber - julienned1 bunch radishes, diced12 grape or cherry tomatoes (whole)1 cup apple cider vinegarFreshly ground pepper and salt to taste
1. Boil eggs until cooked. Shell and slice per your preference.
2. Combine all ingredients in large bowl and mix well with fork. Season with salt and pepper to taste.
3. Chill and serve over a cup of mixed greens, open face on a slice of whole wheat bread or with wheat thins (calories not included in recipe). Mustard or curry powder may add an additional layer of flavor.
Makes 14 1/4 cup servings.
