Light Blueberry Crepes

2 egg whites1/2 tsp. Vanilla Extract1/2 tsp. Splenda1 tbsp HeartSmart Bisquick Mix 1/4 cup Fat free Cottage Cheese1/2 tsp. Vanilla Extract1/2 tsp. splenda 3 oz. Kroger Light Blueberry Yogurt1/8 cup of Log Cabin sugar Free Syrup
mix 2 egg whites, 1/2 tsp. Splenda, 1/2 tsp. vanilla and 1 Tbsp Heart Smart Bisquick Mix together until blended.
preheat a non stick frying pan or crepe pan, (you can spray a little pam on it if you like). Pour the crepe mixture onto hot pan and roll pan around until the bottom is covered.
Let cook for about a minute on medium heat, you can use a butter knife or thin spatula to check the bottom to see when you need to flip it. When the bottom is lightly browned, flip the crepe and cook the other side. Move Crepe to plate when both sides are done.
Mix Cottage cheese, Splenda, Vanilla and half the blueberry yogurt together until smooth. Spread the mixture on the crepe, roll up, top with remaining Yogurt and syrup. Enjoy!
you can leave off the syrup if it's sweet enough for you and you can use other flavors of yogurt OR fresh blueberries as well. These are SO delicious and SO low in calories, Fat, carbs and sugar. This will make one fully filled crepe. If you omit the syrup, this is about 110 calories! If you just fill it with Cottage cheese and omit the yogurt, it's about 70 calories.
