Kte's Steamed Clams and Chorizo

* *Extra Light Olive Oil, 1 tbsp (remove) * Red Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) (remove) * *Soyrizo, Vegan Chorizo, 4 oz (remove) * Minced Garlic, 1 tbsp (remove) * White Wine, 8 fl oz (remove) * Clams, 8 cup (4 lbs) (remove) * Parsley, 2 tbsp (remove) * *Francisco International French roll, .5 serving (remove)
1. Heat olive oil in an 8qt pot over medium-high heat. Add bell pepper and cook, stirring until slightly softened, about 3 minutes. Add chorizo and garlic; cook, stirring often, until chorizo is lightly browned, about 2 minutes.
2. Add wine, 1/2 cup water, and the clams; cook and cover until the clams have opened; 6 to 8 minutes. Discard any unopened clams. Sprinkle with parsley and serve with bread.
