Shrimp, 6 large, UNCOOKED, shelled and deveinedPam Cooking Spray1T olive oil1/8 cup Seasoned Bread Crumbs1/2T Garlic Powder1/8 tsp saltBlack Pepper to Taste
Shell and devein shrimp.
Coat pan with cooking spray.
Put bread crumbs, garlic powder, salt and pepper into a ziplock bag.
Put shrimp into the bag and shake to coat.
Put olive oil in center hot of pan. Turn heat to med. Before the oil spreads out, drop the shrimp gently into the puddle of oil. There is not a lot of liquid to cook in here, so watch your pan carefully because they will cook fast. Turn them with a pair of tongs, until both sides are opaque.
This makes ONE portion. You can double it for dinner, or put over a bed of cooked broccoli raab, which is how I served it. It tastes as good as "fried" shrimp and is good for a nice lunch! There is a good amount of fat here, but it's good fat and if the rest of your day is decent, this makes a nice treat.
