Thai curry chicken

2 T. cooking oil3 bonelss skinless chicken breasts( cut into bite size pieces1 medium onion chopped2 T. of red curry paste5 kaffir lime leaves1 c. light coconut milk1/2 c. water1 cup of cauliflower flowerets1 med red pepper cut into strips1 cup of green beans2 T. fish saucejuice and zest of 1 lime1/2 c. chopped cilantro
Heat oil in heavy saute pan until hot. Add onion and curry paste and fry for 2 minutes. Add coconut milk water and lime leaves and bring to boil. Add chicken and veggies and cook until chicken is done. Add fish sauce, lime juice and zest stir to combine. Serve with Jasmine rice and garnish with cilantro.
