Steamed Kale with Apples

Ingredients
1 med. onion (any variety)1 clove garlic1 med. apple (any sweet variety that cooks well)4 c. kale (any variety)1 tbsp. olive oil1 tbsp. butter1-1/2 tsp. ground cinnamon1-1/2 tsp. ground turmeric
Directions
Makes 4 servings

Chop onion into medium-sized pieces and set aside. Do the same with the apple, but keep it separate from the onion.

Use a large saucepan with a lid. Pre-heat at medium-high.

Add olive oil and coat pan bottom. Then add turmeric and stir. Cook turmeric for 30 seconds, then add onion, garlic and butter. Stir well and cover. Give another quick stir every minute.

After 3 minutes, add apples and cinnamon. Continue stirring every minute, cooking at medium-high heat while covered to retain moisture. If required, add small amounts of water to keep the onions from sticking.

Once onions start turning translucent, add kale and cover. Remove from heat after 30-45 seconds, or when kale is *slightly* wilted.

Empty contents into a large glass bowl, stir and serve immediately.

    I used leeks instead of an onion and made it with 2 apples. I also left the skin on the apples, it didn't say one way or the other. Be sure to cut up the kale too so the pieces aren't so big. Overall, this was really good. Pretty healthy and a good way to eat kale. - 10/26/09
