Potato Galette with fried Mushrooms for 1

Ingredients
1 medium potato, grated (100g)15 g grated cheese1 tsp Parmesan cheese2 tsp melted butter1 tsp oil for frying40 g fried button mushrooms (optional)
Directions
1. Mix first four ingredients and season with salt and pepper or other herbs if you wish.
2. Heat medium sized frying pan with 1 tsp oil. Heat should be on low-medium.
3. Separate potato mixture into 3 balls and place in frying pan, flatten balls until they are about 1 cm thick. Cover frying pan with lid and cook for 5 minutes on each side. When ready they should be golden and crisp.
4. Fry up the mushrooms and serve with potato galette if desired.
